The gastronomic culture of Hidalgo, understood as an intangible cultural heritage that many citizens appreciate, and cooks proudly bear, requires activities that promote that vision of heritage and that protect knowledge and practice, also, traditional Mexican cuisine has an inscription before UNESCO, which commits the Mexican state with a safeguard plan that transmits the tradition to the following generations.
